Ingredients
For the Aloo Tikki
- 3 Potato boiled and peeled, medium-sized
- 4 slices Bread crusts removed and soaked in water, then squeezed dry, white bread
- 1 tsp Cumin Seeds jeera, ground
- 2 Chili finely chopped, green, medium
- 2 tbsp Coriander dhania, finely chopped
- 1 tsp Chaat Masala
- 1.5 tsp Salt or to taste
- 1/2 cup Oil for deep frying
- 1/2 cup Breadcrumb
- 2 tbsp Corn Flour
- 1/2 tsp Salt for cornflour mixture
For the Garnish
- 2 tbsp Chutney green
- 2 tbsp Chutney meetha chutney, sweet
- 2 tbsp Chickpea Noodle crispy chickpea flour noodles
- 1/2 tsp Black Salt black salt
- 1/4 cup Onion finely chopped
- 2 tbsp Coriander dhania, finely chopped
Instructions
Prepare the Potatoes
- Boil 3 medium potatoes for 10 minutes until tender. Cool slightly, peel, and mash well with a fork.
Prepare the Bread
- Remove the crusts from 4 slices of white bread. Soak the bread slices in water for a few minutes, then squeeze out all excess water.
Combine Ingredients
- In a large bowl, combine the mashed potatoes, squeezed bread, 2 finely chopped green chilies, 1 teaspoon ground cumin, 2 tablespoons chopped cilantro, 1 teaspoon chaat masala, and 1.5 teaspoons salt. Mix thoroughly.
Shape the Tikkis
- Form the mixture into small, flat patties (about 1-inch thick). Set aside.
Prepare the Coating
- In a separate bowl, whisk together 2 tablespoons of cornflour with 1/2 teaspoon of salt and enough water to create a smooth batter.
Coat and Fry
- Dip each tikki into the cornflour batter, ensuring it's fully coated. Then, roll each tikki in 1/2 cup breadcrumbs until fully coated. Heat 1/2 cup oil in a pan for deep frying. Carefully fry the tikkis until golden brown and crispy, about 2-3 minutes per side.
Assemble and Garnish
- Arrange the fried aloo tikkis on a serving plate. Top each tikki with 2 tablespoons of green chutney, 2 tablespoons of sweet chutney, a sprinkle of kala namak, chaat masala, 1/4 cup finely chopped onions and 2 tablespoons of chopped coriander leaves. Finally, garnish with 2 tablespoons of sev.
