Ingredients
 

For the Batter

  • 2 cup Rice use dosa rice or short-grain rice for best results; soak overnight (at least 8 hours) or for 4-5 hours in plenty of water.
  • 1/2 cup Coconut approximately 1 small coconut, fresh, grated
  • 1 tsp Salt adjust to taste
  • Water as needed Water for adjusting batter consistency to a thin, pourable consistency.

For Cooking

  • 2-3 tbsp Oil any neutral-flavored oil like vegetable or coconut oil.

Prepare the Batter

  • Soak the rice in plenty of water overnight (at least 8 hours) or for 4-5 hours. Drain well.
  • Grind the soaked rice and grated coconut together in a blender until a smooth batter forms. Add water as needed to achieve a thin, slightly runny consistency. The batter should be like thin milk.
  • Add salt and mix well.

Cook the Dosa

  • Heat a non-stick pan or griddle over medium heat.
  • Lightly grease the pan with oil using a paper towel or kitchen brush to avoid excess oil.
  • Pour 1/4 - 1/3 cup of batter onto the hot pan. Immediately spread it thinly into a round crepe using the back of a ladle or a spatula.
  • Cook for 4-5 seconds, or until the edges begin to lift from the pan.
  • Carefully flip the dosa and cook for another 15-20 seconds, or until lightly golden and cooked through.
  • Drizzle a little more oil if needed during cooking.
  • Remove the dosa from the pan and serve immediately.
  • Repeat with the remaining batter.

Serve

  • Serve hot with your favorite accompaniments such as coconut chutney, sambar, or even a simple cup of tea or coffee.
