  • 500 grams Puffed Rice also known as murmura, kurmura
  • 100 grams Peanuts groundnuts, roasted
  • 60 grams Split Chickpea also known as pottukadalai, chutney dal, roasted

Instructions
 

Prepare the Garlic

  • In a heavy-bottomed pan or kadhai, heat the oil over medium-low heat. Add the crushed garlic and sauté until golden brown and slightly crisp, about 5-7 minutes. This step is crucial for the chivda's shelf life and flavor.

Roast the Nuts and Dal

  • Add the roasted chana dal and peanuts to the pan. Sauté for another 3-4 minutes, stirring frequently, until fragrant and lightly browned.

Add Spices and Aromatics

  • Stir in the asafoetida, turmeric powder, red chili powder, and curry leaves. Cook for 1 minute, until fragrant, ensuring the spices don't burn.

Incorporate Puffed Rice

  • Add the salt and mix well. Then, add the puffed rice (kurmura). Gently mix everything together, ensuring all the puffed rice is evenly coated with the spice mixture.

Final Saute and Cooling

  • Sauté the mixture for another 3-5 minutes on low heat, stirring frequently, until the chivda is evenly cooked and slightly crisp. Remove from heat and allow the chivda to cool completely.

Storage

  • Once completely cooled, store the chivda in an airtight container or a steel container at room temperature. It will stay fresh and crispy for several days.
