Ingredients
For the Vegetable Mixture
- 2 cup Vegetable green beans (approx. 2 cups chopped), mixed, peas, such as carrots
- 2 Potato chopped, medium-sized
- 1/2 cup Moringa Leaves drumstick leaves
- 1 tbsp Corn Flour
- 1/2 tsp Pepper black, or to taste
- 1.5 tsp Salt or to taste
For Stuffing & Coating
- 1 Mozzarella Cheese ball, cut into cubes
- 1/2 cup Breadcrumb
- 1 tbsp All-Purpose Flour
- 1 tsp Corn Flour for slurry
- Water as needed, for making a thin slurry
For Frying
- Vegetable Oil for deep frying
Instructions
Prepare the Vegetable Mixture
- Pressure cook the mixed vegetables and potatoes until tender. While the vegetables are cooking, sauté the moringa leaves in a little oil until slightly wilted. Mash the cooked vegetables and sautéed moringa leaves together. Stir in the cornflour, pepper, and salt. Mix well.
Prepare the Cheese Balls
- Cut the mozzarella cheese into medium-sized cubes. In a separate bowl, whisk together the all-purpose flour, cornflour, and enough water to create a thin, smooth slurry. Take a portion of the vegetable mixture, shape it into a ball, and make a small indentation in the center. Place a cube of mozzarella in the indentation, seal it completely, and roll it into a smooth ball.
Bread and Fry
- Roll each ball in breadcrumbs. Refrigerate for 15-20 minutes to allow the balls to firm up. Heat the vegetable oil in a deep pan or wok to 350°F (175°C). Carefully drop the balls into the hot oil and fry until golden brown and crispy, turning occasionally. Remove the balls and drain on paper towels to remove excess oil.
Serve
- Serve the cheese-stuffed vegetable and moringa balls immediately while the cheese is still melted and gooey. Enjoy with your favorite dipping sauce!
