Bottle Gourd Preparation
- 1 medium Bottle Gourd lauki, also known as opo squash; about 1 pound
Spices and Seasoning
- 1 1/2 tsp Salt adjust to taste
- 1 tsp Chili Powder red
- 1 tsp Coriander Powder dhania
- 1 tsp Turmeric Powder haldi
- 1 tsp Dry Mango Powder dry mango powder
- 1/2 tsp Chaat Masala
- 1/2 tsp Garam Masala
Cooking Oil
- 1/4 cup Vegetable Oil or any cooking oil of your choice

- Peel the bottle gourd and slice it into 2-inch pieces.
Cooking the Bottle Gourd
- Heat the oil in a non-stick pan or tava over medium-high heat. Add the bottle gourd pieces and sprinkle with 1 teaspoon of salt, ensuring even coating. Fry for 2 minutes, stirring occasionally, until lightly browned.
Adding Spices
- Reduce heat to medium. Sprinkle half of the spice mixture (red chili powder, coriander powder, turmeric powder, amchur powder, chaat masala, and garam masala) over the bottle gourd. Stir gently to coat evenly. Continue cooking for 3-4 minutes.
Final Cooking and Serving
- Flip the bottle gourd pieces and sprinkle with the remaining spice mixture. Cook for another 3-4 minutes, or until the bottle gourd is tender, golden brown, and slightly crispy on both sides. Transfer to a serving plate. Serve hot with dal, rice, roti, or naan.
