Ingredients
Vegetables
- 1/2 cup Bottle Gourd lauki, grated
- 1/4 cup Potato boiled, grated
- 1 Tbsp Onion finely chopped
Dairy & Binding
- 2 Tbsp Cottage Cheese cottage cheese, grated
- 4 Tbsp Breadcrumb
Spices & Seasoning
- 1/2 tsp Ginger Paste
- 1/4 tsp Pepper black, coarsely ground
- 1/4 tsp Chaat Masala
- 1/4 tsp Garam Masala
- 1/4 tsp Chili Powder red
- 1/4 tsp Dried Fenugreek Leaf dried fenugreek leaves
- 1 1/2 tsp Salt or to taste
For Frying
- 2 Tbsp Oil
Instructions
- Blanch the grated bottle gourd (lauki) to soften it slightly. This helps remove excess moisture and ensures the tikkis hold their shape. In a mixing bowl, combine the blanched bottle gourd, grated boiled potato, chopped onion, grated paneer, bread crumbs, ginger paste, black pepper, chaat masala, garam masala, red chili powder, kasuri methi, and salt.
- Divide the mixture into equal portions and shape each portion into flat, round patties of medium thickness. Heat the oil in a non-stick pan over medium heat. Once the oil is hot, carefully place the lauki tikkis in the pan, ensuring not to overcrowd it.
- Shallow fry the tikkis for about 3-4 minutes per side, or until they turn golden brown and crispy. Flip them gently to ensure even cooking. Cooking over medium heat prevents burning and allows the tikkis to cook through. Once cooked, remove the tikkis from the pan and place them on a plate lined with a paper towel to absorb any excess oil.
- Serve the hot, crispy lauki tikkis immediately with your choice of chutney or a refreshing yogurt dip. These flavorful fritters are a delightful snack or appetizer for any occasion.
Recipe Notes
Good To Know
- After grating the bottle gourd, squeeze out as much water as possible before mixing it with the other ingredients. This prevents the tikkis from becoming soggy and helps them hold their shape during frying.
- For a gluten-free version, swap regular bread crumbs with crushed cornflakes or use roasted besan (chickpea flour) to help bind the mixture and add an extra layer of flavor.
- If you prefer a healthier option, these tikkis can also be air-fried or baked at 200°C (400°F) until golden and crisp, turning them over halfway for even browning.
- Add a tablespoon of finely chopped fresh mint or coriander leaves to the tikki mixture for a burst of freshness and color.
Expert Tips
- For extra crispy tikkis, shallow fry them in a mix of oil and ghee (clarified butter).
- Serve the bottle gourd tikkis with a side of mint-coriander chutney and tamarind date chutney for a balanced flavor profile.
- To make the tikkis ahead of time, prepare the mixture and shape them into patties. Refrigerate until ready to cook.
Storage Instructions
- Store leftover tikkis in an airtight container in the refrigerator for up to 3 days. Reheat in a pan, oven, or air fryer until heated through.
