  • In a mixing bowl, combine the yogurt, water, and oil. Whisk well to ensure the ingredients are fully incorporated.
  • Add the instant dhokla mix to the wet ingredients. Whisk thoroughly until no lumps remain, creating a smooth batter. This forms the base for your Kuzhi Paniyaram.
  • Heat a paniyaram pan over medium heat. Add a small amount of oil to each mold. This prevents sticking and ensures even browning.

  • Carefully pour a spoonful of batter into each hot, oiled mold. Fill each mold about ¾ full to allow for expansion during cooking.
  • Cook for 2-3 minutes, or until the bottoms are golden brown and crisp. The edges will start to pull away from the pan when they are ready to flip.
  • Gently flip each paniyaram using a small spoon or skewer. Cook the other side for another 2-3 minutes, until golden brown and cooked through.

  • To prepare the Coconut Chutney, combine the grated coconut and ½ cup of water in a blender or food processor. Blend until a smooth paste forms.
  • Heat the oil in a small saucepan over medium heat. Add the mustard seeds and allow them to splutter. This releases their aromatic flavor.
  • Add the curry leaves to the pan and sauté for a few seconds until fragrant. Be careful not to burn them.
  • Pour the coconut paste into the pan and stir well to combine. Add salt to taste. Simmer for 5-7 minutes, or until the chutney is heated through and slightly thickened.
