Ingredients
For the Batter
- 1 cup Rice also known as parboiled rice. use good quality idli rice for best results.
- 1/2 cup Pigeon Peas also known as white split pigeon peas., black, split
- 1/2 teaspoon Fenugreek Seeds also known as methi dana. improves the flavor and texture of the batter.
- 1.5 teaspoons Salt adjust to taste.
For the Vegetable Filling
- 1/2 cup Onion finely chopped.
- 1-2 Chili Pepper finely chopped. adjust quantity based on spice preference., green
- 1/2 cup Carrot grated.
- A few Curry Leaves freshly plucked.
For Tempering
- 2 tablespoons Oil sunflower oil or any neutral-flavored oil.
- 1/2 teaspoon Mustard Seeds also known as rai.
- 1 tablespoon Chickpea Lentil adds a nice crunch and flavor., chana dal, optional, split
- 1 tablespoon Pigeon Peas black, for tempering, for tempering only., small amount, split
Instructions
Prepare the Batter
- Soak idli rice, urad dal, and fenugreek seeds separately in water for at least 4 hours.
- Grind the soaked urad dal to a fluffy batter, adding ice cubes during grinding to maintain a cool temperature and increase volume.
- Grind the soaked rice separately to a light, semi-coarse batter, adding water as needed.
- Combine the urad dal and rice batters. Add salt and mix well. Let the batter ferment for at least 8 hours, or overnight, in a warm place.
Prepare the Vegetable Filling
- Heat oil in a pan. Add mustard seeds and let them splutter.
- Add chana dal and urad dal (for tempering); sauté until golden brown.
- Add finely chopped onions, green chilies, and curry leaves; sauté until fragrant.
- Add grated carrots and sauté until slightly softened.
- Season with salt and remove from heat.
Combine and Cook
- Gently mix the prepared vegetable filling into the fermented batter.
- Heat a paniyaram pan or a non-stick pan with small depressions. Lightly grease with oil.
- Pour a small amount of batter into each depression, filling about ¾ full.
- Cook until golden brown and crispy on both sides, flipping halfway through.
- Serve hot with your favorite chutneys.
