Ingredients

- 1 cup Whole Wheat Flour whole
- 1/2 cup Sugar granulated
- 1 tsp Fennel Seeds crushed (saunf)
- 1/2 tsp Baking Soda (adjust to your altitude if needed)
Wet Ingredients
- 1/4 cup Coconut freshly grated, or desiccated, shredded
- 1/4 cup Fruit crushed; raisins or blueberries recommended, dried
- 1/4 tsp Cardamom Powder for extra flavor, optional
- 3/4 cup Water as needed for desired consistency, or milk
Cooking
- 2 tbsp Oil vegetable or coconut oil
Instructions
Prepare the Batter
- Mix the whole wheat flour, sugar, fennel seeds, baking soda, and cardamom powder (if using) in a large bowl. Gradually add the water or milk, mixing until a smooth, slightly thick batter forms. Stir in the shredded coconut and dried fruit. Let the batter rest for 10-15 minutes.
Cook the Paniyaram
- Heat the paniyaram pan or appe pan over medium heat. Add a teaspoon of oil to each section of the pan. Once hot, pour a small ladleful of batter into each section, filling about ¾ full.
Flip and Finish
- Cover the pan and cook for 2-3 minutes, or until the bottom is golden brown. Carefully flip each paniyaram and cook for another 1-2 minutes, until both sides are golden brown and cooked through. If the inside is still slightly sticky, allow them to cool for a few minutes before serving.
