Ingredients
Vegetables
- 1 medium Bell Peppers finely chopped, green
- 1 medium Tomato finely chopped
- 1 medium Onion finely chopped
- 1 medium Carrot finely chopped
- 1/2 inch Ginger finely chopped
- 2 Chili finely chopped, green
- 10 Curry Leaves chopped
Dry Ingredients
- 2 cup Semolina also known as sooji or rawa
- 1 tsp Salt adjust to taste
- 1/2 tsp Pepper Powder black
- 1/2 tsp Cumin Powder
- 1/2 tsp Coriander Powder
- 1/4 tsp Chili Powder adjust to taste, red
- 1 tsp Sambar Powder optional
Instructions
Prepare the Vegetables
- Finely chop all the vegetables: green bell pepper, tomato, onion, carrot, ginger, and green chilies.
Make the Batter
- In a large bowl, whisk together the semolina, yogurt, water, salt, black pepper powder, cumin powder, coriander powder, red chili powder, and sambar powder (if using) until a smooth batter forms. Let it rest for 10-15 minutes.
Combine Ingredients
- Add the chopped vegetables, shredded coconut, and curry leaves to the batter. Mix well to combine.
Cook the Appe
- Heat your appe pan or a non-stick pan over medium heat. Lightly grease the molds with oil. Pour a spoonful of batter into each mold, filling it about ¾ full. Cover and cook for 5-7 minutes, or until the appe are golden brown and cooked through.
