Prepare the Potatoes

  • Cut the large potato into thin julienne strips. Rinse the julienne potatoes under cold water and drain well.

Blanch the Potatoes

  • Bring a small pot of water to a boil. Add the potato juliennes and blanch for 1-2 minutes until slightly softened but still firm. Immediately drain and rinse under cold water to stop the cooking process. Pat the potatoes dry with paper towels.

Coat and Fry the Potatoes

  • In a bowl, toss the blanched potatoes with corn flour, salt, and black pepper until evenly coated. Heat the vegetable oil in a deep fryer or large pan to 350°F (175°C). Carefully add the coated potatoes to the hot oil and fry until golden brown and crispy, about 5-7 minutes, stirring occasionally. Remove with a slotted spoon and drain on paper towels.

Fry the Egg

  • Melt the butter in a small non-stick pan over medium heat. Crack the egg into the pan and cook to your desired doneness. Season with salt and pepper.
