Ingredients
Potato Nests
- 3 large Potatoes thinly sliced and soaked in salted water
Filling
- 2 tbsp Soy Granules soaked
- 2 tbsp Potatoes boiled, mashed
- 2 tbsp Cheese any variety, grated
- 2 tbsp Bell Peppers chopped, red
- 1 tsp Garlic minced
- 1 tbsp Onion chopped, finely
- 1 tsp Chili Flakes
- 1 1/2 leaves Basil fresh
- Salt And Pepper to taste
- 1 tsp Italian Seasoning
- 1 tbsp Oil
Eggs
- 3 Eggs
Instructions
- Using a petal cutter, cut the thinly sliced potatoes into petal shapes. Immerse the potato petals in a bowl of cold water to prevent browning while you prepare the other ingredients. This helps maintain their fresh appearance and texture.
- Cut three circles from the potato slices, matching the size of your muffin tin cavities. These will form the base of the potato flowers.
- Lightly grease each muffin tin cavity with butter or cooking spray. Sprinkle a small amount of grated cheese into each cavity. This adds a layer of flavor and helps the potato nests crisp up beautifully.
- Heat the oil in a pan over medium heat. Add the minced garlic and finely chopped onion. Sauté until the onions are translucent and fragrant, about 5 minutes.
- Add the soaked soy granules, mashed potatoes, chopped red bell pepper, salt, pepper, Italian seasoning, chili flakes, and fresh basil leaves to the pan. Cook for another 5-7 minutes, stirring occasionally, until the mixture is heated through and the flavors have melded.
- Stir in the grated cheese and remove the pan from the heat. The residual heat will melt the cheese perfectly.
- Allow the filling to cool slightly before assembling the potato flowers.
- Place the potato circles into the prepared muffin tin cavities. Fill each cavity with the cooled potato and soy granule mixture.
- Arrange the potato petals around the filling in each muffin cup, creating a flower-like appearance. Gently overlap the petals for a visually stunning presentation.
- Carefully crack an egg into the center of each potato flower, keeping the yolk intact.
- Brush the potato petals with melted butter or olive oil for added richness and color.
- Bake in a preheated oven at 180°C (350°F) for 20 minutes, or until the egg whites are set and the potatoes are golden brown.
- Season the cooked eggs with a pinch of salt, pepper, and chili powder, if desired. Serve immediately and enjoy!
Recipe Notes
Good To Know
- Make thin slices of potato so that they cook well while baking.
- For extra crispiness, shape the mashed potato mixture into flower molds and lightly brush with melted butter before baking or pan-frying until golden brown before adding the egg.
- If you prefer a vegetarian version without soya granules, substitute with finely chopped sautéed mushrooms or caramelized onions for a savory depth of flavor.
- To ensure the sunny-side-up eggs are perfectly cooked with set whites and runny yolks, cover the pan with a lid for the last minute of cooking, allowing gentle steam to finish the tops without overcooking the yolks.
- For a vibrant presentation, sprinkle finely chopped chives or parsley and a dash of smoked paprika over the finished potato flowers just before serving.
Expert Tips
- Experiment with different cheeses! Grated cheddar, parmesan, or crumbled feta would all be delicious additions to the potato mixture.
- Don't have flower molds? Use cookie cutters or simply free-form the potato mixture into small nests before cooking.
- For a heartier meal, serve these potato flowers alongside a fresh green salad or some grilled vegetables.
Storage Instructions
- These potato flowers are best enjoyed fresh. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in the microwave or oven.
