Prepare the Egg Masala

  • Sauté finely chopped onions, green chilies, and ginger-garlic paste in oil until softened. Add the chopped tomatoes and cook until slightly softened, but not mushy. Stir in pav bhaji masala, salt, and mix well.

Add the Eggs and Cheese

  • Add the chopped hard-boiled eggs to the masala and mix gently. Create a space in the center of the pan. Crack one raw egg into the space and gently scramble it within the masala. Stir in the processed cheese until melted and combined.

Cook the Sunny-Side Up Eggs

  • In a separate pan, melt butter over medium heat. Crack two eggs into the pan and cook sunny-side up until the whites are set and the yolks are still runny.

Assemble and Serve

  • Carefully place the sunny-side-up eggs on top of the egg masala. Sprinkle with a little extra pav bhaji masala and garnish with fresh coriander. Serve hot, ideally with buttery pav (Indian bread rolls).
