- ¾ cup Cornflakes coarsely crushed, plus ½ cup extra
- ½ tsp Baking Powder
- 1 pinch Salt

- ½ cup Butter softened, unsalted
- ½ cup Sugar granulated
- ½ tsp Vanilla Extract
- 1 tbsp Milk or as needed
Instructions
- Preheat your oven to 350°F (175°C). This ensures the oven is at the correct temperature for even baking.
- Lightly grease a baking sheet. This prevents the cookies from sticking.
- In a food processor or by hand, coarsely crush ¾ cup of cornflakes. You want some larger pieces remaining for texture.
- Measure out ½ cup of the crushed cornflakes and set aside. The remaining crushed cornflakes will be used for coating.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This incorporates air for a tender cookie.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Add the ½ cup of crushed cornflakes to the dough and mix until evenly distributed.
- If the dough seems too dry, add milk, 1 tablespoon at a time, until it comes together.
- Roll rounded tablespoons of dough into balls and flatten slightly. Gently press each cookie into the remaining crushed cornflakes, coating both sides.
- Place the cookies onto the prepared baking sheet, leaving some space between each.
- Bake for 15-17 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. They will crisp up as they cool.
