Instructions

Prepare the Doughs

  • Sift together 1 cup all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt into a bowl. Set aside.
  • In a separate bowl, cream together 1/3 cup softened butter and 1/3 cup sugar until light and fluffy. Beat in 1 tablespoon milk and 1/2 teaspoon vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms. Add a couple more teaspoons of milk if needed to reach desired consistency. Wrap the dough in plastic wrap and chill for 30 minutes.
  • Repeat steps 1-3 for the chocolate dough, adding the cocoa powder to the dry ingredients along with the flour, baking powder, and salt.

Assemble and Chill

  • On a lightly floured surface, roll out the vanilla dough to 1/4-inch thickness. Do the same with the chocolate dough.
  • Place the chocolate dough on top of the vanilla dough. Starting from one short end, tightly roll the dough into a log. Wrap the log in plastic wrap and freeze for at least 30 minutes.

Bake and Cool

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Remove the dough log from the freezer and let it sit for 1-2 minutes to slightly soften. Using a sharp knife, slice the log into 1/2-inch thick cookies.
  • Place the cookies onto the prepared baking sheet. Bake for 15-20 minutes, or until the edges are lightly golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Store in an airtight container once cooled.

Recipe Notes

Expert Tips for Perfect Pinwheels

  • For richer chocolate flavor, use dark cocoa powder.
  • Don't overmix the dough, as this can lead to tough cookies.
  • Ensure your butter is softened but not melted for optimal dough consistency.
  • Chill the dough thoroughly before rolling to prevent sticking and ensure clean slices.
