- 1/2 tsp Salt adjust to taste
- 1 tbsp Cumin Seeds dry roasted
Wet Ingredients
Instructions
Prepare the Lentils
- Wash 1/2 cup red lentils and pressure cook with 1 1/2 cups water for 2-3 whistles. Allow pressure to release naturally, then mash the lentils.
Roast Cumin Seeds
- Dry roast 1 tablespoon of cumin seeds for 1-2 minutes until fragrant. Set aside to cool.
Combine Wet Ingredients
- In a large bowl, combine melted butter and sugar, mixing until well combined. Add yogurt and beat until smooth.
Add Mashed Lentils
- Incorporate 1/4 cup of the cooked and mashed red lentils into the wet ingredients, mixing thoroughly.
Combine Dry and Wet Ingredients
- Add the all-purpose flour, baking powder, salt, and roasted cumin seeds to the wet mixture. Mix until a smooth dough forms. If the dough is too dry, add a little more of the cooked lentil mixture, a tablespoon at a time.
Chill the Dough
- Cover the dough with plastic wrap and refrigerate for 10-15 minutes to allow the flavors to meld.
Preheat & Prepare Baking Sheet
- Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
Roll and Cut Cookies
- On a lightly floured surface, roll out the dough to approximately 1/4 inch thickness. Use cookie cutters to cut out desired shapes.
Bake the Cookies
- Place the cookies onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown. Keep an eye on them to prevent burning.
Cool and Store
- Remove cookies from the oven and let them cool completely on a wire rack before storing in an airtight container.
