  • Gently pat the corn kernels dry with a clean kitchen towel to remove excess moisture.
  • In a bowl, toss the corn kernels with 1/2 cup corn flour and 1 teaspoon of salt, ensuring each kernel is evenly coated. Let it sit for 15 minutes.

Prepare the Salad

  • Finely chop the carrot and cucumber.
  • In a separate bowl, combine the chopped carrot, cucumber, and coriander. Drizzle with olive oil, season with salt and pepper, and mix well. Let it sit for 15 minutes to allow the flavors to blend.

Fry the Corn

  • Heat the vegetable oil in a large pan or wok over medium-high heat. Fry the corn kernels in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy.
  • Remove the crispy corn from the oil and place it on a paper towel-lined plate to drain excess oil.
