Ingredients
For the Filling
- 1 tbsp Olive Oil
- 1 medium Onion finely chopped
- 1 tsp Ginger minced
- 1 medium Bell Peppers finely chopped, green
- 1 medium Bell Peppers finely chopped, red
- 1 cup Corn fresh or frozen, sweet, thawed and drained
- 200 gm Cottage Cheese diced
- 2 Chilies adjust to taste, finely chopped, green
- 1 tbsp Chaat Masala
- 1 tbsp Tomato Ketchup or tomato sauce
- 1 tbsp Lemon Juice
- 2 tbsp Coriander chopped, fresh
- Salt to taste
For Serving
- 6 Rotis or large flour tortillas
Instructions
Prepare the Filling
- Heat olive oil in a pan over medium heat. Add onions, ginger, and green chilies. Sauté for 1 minute until fragrant.
- Add bell peppers and sauté for another minute until slightly softened.
- Stir in sweet corn and paneer. Cook for 2-3 minutes, until heated through.
- Add salt, chaat masala, and coriander. Mix well and remove from heat.
- Stir in lemon juice and tomato ketchup. Mix well.
Assemble the Wraps
- Spread 2-3 tablespoons of the filling onto each roti or tortilla.
- Roll up tightly and serve immediately.
