Ingredients
- 1 cup Tortillas maida, or flour for the flour
- 1/2 tsp Salt or as per taste, tsp
- 1 Oil tsp
- Water or dough for kneading the dough
- 1 bunch Stuffing or spinach for the spinach
- 1/2 cup Corn Kernels
- 1/2 cup Cottage Cheese paneer, grated
- 1/2 cup Cheese mozzarela
- Pepper as required, black
- 1.5 tsp Salt or as per taste
- 1 Tomato or salsa for the salsa medium finely chopped
- 2.5 tbsp Onion finely chopped
- 1 tbsp Lemon Juice
- 1 pinch Oregano Flakes of dried
- Pepper as required, black
- 1.5 tsp Salt or as per taste
Instructions
Prepare the Tortillas
- Combine flour, salt, and oil in a bowl. Gradually add water, mixing until a soft dough forms. Knead for a few minutes until smooth. Let the dough rest for at least 15 minutes.
Prepare the Filling
- Blanch the spinach in boiling water for 2-3 minutes until wilted. Drain well and squeeze out excess water. Chop finely.
- Cook corn kernels until tender-crisp, about 4-5 minutes if frozen. Drain if necessary.
- In a bowl, combine chopped spinach, corn, cottage cheese (or feta), mozzarella cheese, salt, and pepper. Mix well.
Make the Salsa (Optional)
- Combine diced tomato, red onion, lime juice, salt, pepper, and oregano in a bowl. Mix well.
Assemble and Cook the Quesadillas
- Divide the dough into 6 equal portions. Roll each portion into a thin circle.
- Heat a lightly oiled large skillet or griddle over medium heat. Cook each tortilla for 1-2 minutes per side, or until lightly browned.
- Spread half of the filling onto one side of each cooked tortilla. Fold the tortillas in half.
- Cook the folded quesadillas in the skillet for 2-3 minutes per side, or until the cheese is melted and the tortillas are golden brown and crispy.
- Cut each quesadilla in half.
- Serve immediately with salsa, ketchup, and/or mayonnaise.

- For extra flavor, add a pinch of garlic powder or onion powder to the filling.
- If you don't have fresh corn, frozen corn works perfectly.
- For a spicier quesadilla, add a pinch of red pepper flakes to the filling.
