I fell in love with this surprisingly delicious recipe! Corn and potatoes baked in a Philips Air Fryer create a unique texture and flavor that's far beyond your average baked potato. The delightful aroma alone will make your mouth water. This recipe is surprisingly cheesy-tasting, even without any cheese!This recipe is incredibly versatile. Feel free to experiment with different shaped baking tins to make it extra appealing to kids. We used a cute hut-shaped tin for ours, but get creative!Prepare to be amazed by the crispy top and fluffy interior. It's the perfect side dish or light meal.

Ingredients
Vegetables
- 2 Potato boiled, medium-sized
- 1 cup Corn fresh or frozen
- 1/2 cup Bell Peppers capsicum, finely chopped
- 1/2 cup Onion finely chopped
Dairy & Bread
- 1 slice Bread brown
- 2 tbsp Mayonnaise
- 1 tbsp Butter divided use
Seasoning
- 1/2 tsp Salt
- 1/2 tsp Chaat Masala optional
Instructions
Prepare the Vegetable Mixture
- Sauté finely chopped onions, bell peppers, and corn in a pan with 1/2 tablespoon of butter for about 5 minutes. Season with salt and chaat masala (if using).
Prepare the Mashed Potato
- Mash the boiled potatoes. Stir in the remaining 1/2 tablespoon of butter and 1 tablespoon of mayonnaise until smooth and creamy.
Assemble the Bake
- Cut a slice of brown bread to fit your baking dish. Spread the remaining 1 tablespoon of mayonnaise evenly over the bread.
Bake in Air Fryer
- Grease your baking dish or line it with foil. Place the bread slice in the dish. Top with the sautéed vegetable mixture, followed by a layer of the mashed potato. Bake in a preheated air fryer at 200°C (400°F) for 10-12 minutes, or until golden brown and heated through.
Serve
- Allow the bake to cool slightly before carefully removing it from the baking dish. Serve hot with your choice of condiments like ketchup and chips.
