Ingredients
Produce
- 2 English Cucumbers
- 3-4 Mint Leaves fresh
- 1/2 Onion red
Dairy & Flavor
- 1 cup Greek Yogurt
- 5 clove Garlic
- 2 tbsp Lemon Juice
Seasoning
- Kosher Salt to taste
- 1/2 tsp Pepper black, freshly ground
Instructions
- Thinly slice the English cucumbers. Using English cucumbers prevents excess water in the salad.
- Thinly slice the red onion. Crush the garlic cloves.
- In a medium bowl, combine the sliced cucumbers, red onion, lemon juice, crushed garlic, salt, and pepper. Gently toss to combine.
- Gently fold in the Greek yogurt, being careful not to overmix or break the cucumber slices. This creates a creamy coating for the vegetables.
- Add the fresh mint leaves. Using whole mint leaves preserves their fresh flavor and aroma.
- Chill the salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld and the salad to become nicely chilled.
