Ingredients
- 2 Chicken Breasts
- 1/2 cup Vegetable Oil to fry
- 2 Eggs
- 1/2 cup All-Purpose Flour (maida)
- 1 cup Breadcrumb
- 1 cup Butter
- 2 tbsp Garlic minced
- 1 tsp Chilli Flakes
- Salt
- Pepper black, to taste
- 1/4 cup Parsley chopped
- 1 cup Mozzarella Cheese grated
Instructions
Prepare the Garlic Herb Butter
- Combine softened butter, minced garlic, chopped parsley, chili flakes (if using), salt, and pepper in a bowl. Mix well with a fork until thoroughly combined. Refrigerate for at least 10 minutes to firm up.
Prepare the Chicken
- Cut each chicken breast into two equal pieces. Using a meat mallet or rolling pin, gently pound each piece to an even thickness of about 1/4 inch. Season both sides with salt and pepper.
Assemble the Chicken Kiev
- Place approximately 2 tablespoons of the chilled garlic herb butter and 2 tablespoons of grated mozzarella cheese in the center of each flattened chicken breast. Fold the chicken over the filling, tucking in the sides to create a tight roll. Gently press the edges to seal.
Bread the Chicken
- Place the rolled chicken breasts on a plate and refrigerate for another 10-15 minutes to allow the filling to set.
- In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs. Dredge each chicken breast in flour, then dip in the egg, and finally coat thoroughly with breadcrumbs. Repeat the breading process for extra crispiness.
