Instructions

Prepare the Filling

  • Combine the crumbled paneer, mozzarella, green chilies, cumin seeds, minced garlic, turmeric powder, and salt in a bowl. Mix well to combine. Refrigerate for at least 30 minutes for optimal flavor and easier handling.

Make the Dough

  • In a large bowl, combine the whole wheat flour and salt.
  • Gradually add water, mixing until a soft, pliable dough forms.
  • Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.
  • Let the dough rest, covered, for 10-15 minutes.

Assemble and Cook the Paratha

  • Pinch off a small portion of the dough and roll it into a small ball.
  • Lightly dust the ball with flour and roll it into a thin circle using a rolling pin.
  • Place a spoonful of the paneer filling in the center of the circle.
  • Bring the edges of the dough together to enclose the filling, pinching to seal.
  • Gently flatten the filled dough ball with your palm, then roll it out again into a slightly thinner circle.
  • Heat a flat griddle or frying pan over medium heat.
  • Cook the paratha on the griddle, adding a few drops of oil around the edges, for 2-3 minutes per side, or until golden brown and cooked through.
  • Serve hot with your favorite chutney or yogurt.

Recipe Notes

Expert Tips for the Perfect Paneer and Mozzarella Garlic Paratha

  • For extra flavor, marinate the paneer in a little yogurt and spices before adding it to the filling.
  • If your dough is too sticky, add a little more flour. If it's too dry, add a teaspoon of water at a time.
  • Don't overcrowd the pan when cooking the parathas. Cook them in batches to ensure even browning.
  • Experiment with different cheeses! Feta or ricotta would also be delicious in this recipe.
