  • 1 tbsp Flaxseed Meal ground flaxseed; mix with 3 tbsp water to create a flax egg.
  • 4 tbsp Butter unsalted; plus 1 tbsp for greasing the waffle iron
  • 3/4 cup Milk warm
  • 3/4 tsp Vanilla Extract

Instructions
 

Prepare the Flax Egg

  • Mix 1 tbsp flaxseed meal with 3 tbsp water in a microwave-safe bowl. Microwave for 20 seconds and set aside.

Combine Dry Ingredients

  • In a large bowl, whisk together the mixed millet flour, corn flour, baking powder, salt, and cane sugar.

Combine Wet Ingredients

  • In a separate bowl, combine the warm milk, melted butter, vanilla extract, and the prepared flax egg. Whisk until well combined.

Combine Wet and Dry Ingredients

  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Add 1-2 tbsp more warm milk if needed to achieve a pourable batter. Let the batter rest for 10 minutes.

Preheat and Prepare Waffle Iron

  • Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the waffle iron with 1 tbsp of melted butter.

Cook the Waffles

  • Pour 1/2 cup of batter onto the preheated waffle iron. Cook for 15-20 minutes at 320°F (160°C), or until golden brown and crispy.
