Ingredients
Dry Ingredients
- 100 gm Wheat Flour whole
- 50 gm All-Purpose Flour also known as maida
- 50 gm Almond Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Cardamom also known as elaichi, ground
Wet Ingredients
- 400 gm Mango Puree
- 200 ml Coconut Milk
- 2 large Eggs
- 50 gm Sugar adjust to taste, granulated
- 2 tbsp Butter unsalted
Garnish
- 3 tbsp Mango diced, fresh chunks
- Optional Coconut Flakes toasted
- Optional Cream coconut whipped cream or mango whipped cream, whipped
- Optional Butter for greasing the waffle iron
Instructions
Prepare the Batter
- Sift together the whole wheat flour, all-purpose flour, almond flour, and baking powder. In a separate bowl, whisk together the mango puree, coconut milk, eggs, and sugar until well combined.
- Gradually add the wet ingredients to the dry ingredients, whisking gently until just combined. Do not overmix.
- Stir in the melted butter.
Cook the Waffles
- Lightly grease your waffle iron with butter.
- Pour 1/2 cup of batter onto the hot waffle iron.
- Cook according to the manufacturer's instructions, until golden brown and crispy.
- Remove from the waffle iron and set aside.
Make the Mango Whipped Cream (Optional)
- If using, combine mango puree and coconut milk in a whipped cream dispenser and charge according to the manufacturer’s instructions. Refrigerate for at least 15 minutes before serving.
