Instructions

Prepare the Spice Paste

  • Dry roast cumin seeds, coriander seeds, dried red chili, garlic, and ginger in a pan over medium heat for 2-3 minutes, or until fragrant. Remove from heat and let cool completely.
  • Grind the roasted spices into a smooth paste using a food processor or blender.

Combine Ingredients

  • Add the spice paste to the boiled baby potatoes. Stir in the salt and fenugreek leaves. Mix well to ensure the potatoes are evenly coated with the masala.
  • Lightly coat the potatoes in vegetable oil (optional), this helps achieve extra crispiness in the air fryer.

Air Fry the Potatoes

  • Preheat your air fryer to 180°C (350°F). Place the masala potatoes in a single layer in the air fryer basket.
  • Air fry for 3 minutes. Then, add the homemade cream (or substitute) and gently toss to coat the potatoes.
  • Continue air frying for another 5-7 minutes, or until the potatoes are golden brown and crispy, shaking the basket halfway through for even cooking.

Serve

  • Remove the potatoes from the air fryer and serve immediately. Enjoy!

Recipe Notes

Expert Tips for Perfect Masala Baby Potatoes

  • For extra flavor, marinate the potatoes in the masala paste for at least 30 minutes before air frying.
  • Adjust the amount of red chili to your preferred spice level. Start with less and add more as needed.
  • If you don't have an air fryer, you can bake these potatoes in a preheated oven at 200°C (400°F) for approximately 20-25 minutes, flipping halfway through.
  • Garnish with fresh cilantro or chopped green onions before serving for added freshness and visual appeal.

  1. Wow what a lovely recipe, your video leaves me drooling. I love it. What I really liked was the unique way of making the masala. I don’t have Airfryer, can I bake it in Oven? What would be the baking parameters.5 stars
