Ingredients
For the Potatoes
- 500 gm Baby Potatoes boiled until tender, then peeled
- 2 tbsp Vegetable Oil
- 1.5 tsp Salt or to taste
For the Tamarind Sauce
- 2 Spring Onions sliced white and green parts separately
- 1 tbsp Ginger minced
- 1 tsp Sugar
- 1/2 cup Tamarind Pulp
- 1 tbsp Soy Sauce
- 1 tbsp Water optional, to adjust sauce consistency
Instructions
Prepare the Potatoes
- Preheat your air fryer to 180°C (350°F). Toss the boiled and peeled baby potatoes with 1 tablespoon of vegetable oil and salt. Air fry for 10 minutes, shaking halfway through. If not crispy enough, air fry for another 5-10 minutes until golden brown and crispy.
Make the Tamarind Sauce
- Heat 1 tablespoon of oil in a pan over medium heat. Add the white parts of the spring onions and minced ginger. Sauté for 2-3 minutes until fragrant and slightly softened.
Combine and Finish
- Add the air-fried potatoes to the pan with the spring onion and ginger mixture. Stir in the tamarind pulp, soy sauce, sugar, and optional water (to thin if needed). Cook for 1-2 minutes, allowing the flavors to meld. Gently toss to coat the potatoes evenly.
