Instructions
Prepare the Baby Corn
- Wash and trim the baby corn. Cut each piece into fourths.
Make the Batter
- In a bowl, whisk together the cornflour, rice flour, salt, and ginger-garlic paste. Add enough water to create a smooth, pourable batter, not too thick or thin.
Coat and Air Fry the Baby Corn
- Coat each baby corn piece in the batter. Preheat your air fryer to 180°C (350°F) for 5 minutes. Arrange the coated baby corn in a single layer in the air fryer basket. Air fry for 8-10 minutes, shaking the basket halfway through, until golden brown and crispy. Remove and set aside to cool.
Prepare the Sauce
- Heat 1 tbsp oil in a pan or wok over medium heat. Add the chopped onion, capsicum, and cabbage. Sauté for 1-2 minutes until slightly softened. Stir in the tomato puree, soy sauce, green chili sauce, red chili powder, and honey. Mix well.
Thicken and Combine
- In a small bowl, whisk together 1 tbsp rice flour with 1 tbsp of water to form a slurry. Slowly add the slurry to the sauce, stirring constantly, until the sauce has thickened to your desired consistency.
Finish and Serve
- Add the air-fried baby corn to the sauce. Gently toss to coat the baby corn evenly. Cook for another 1-2 minutes. Serve hot as an appetizer or snack.
