  • In a blender or spice grinder, combine the melon seeds, pumpkin seeds, almonds, flax seeds, poppy seeds, fennel seeds, and black pepper.
    Dried spices on glass bowls, including black peppercorns, cumin seeds, and mustard seeds.
  • Grind the spices to a fine powder. This creates the aromatic base of the Thandai.
  • In a mixing jar, combine the coconut milk and the ground spice blend.
  • Add the coconut sugar and stir until it dissolves completely.
  • Pour the Thandai into glasses filled with ice.
    Sweetened milk with saffron and cardamom served in a glass on a decorative plate.
  • Garnish with a dollop of coconut cream, if desired, for added richness.
