  • While the milk simmers, combine the almonds, pistachios, cashews, poppy seeds, melon seeds, black peppercorns, fennel seeds, and cardamom pods in a mixer grinder or food processor.
  • Grind the mixture into a fine paste. A smooth paste ensures the flavors meld beautifully with the milk.

  • Once the milk has reduced by half, add the ground nut and spice paste to the saucepan.

  • Stir in the saffron strands. The saffron will infuse the Thandai with its signature color and aroma.
