- 1 tsp Sunflower Oil olive
- 1/2 cup Bell Peppers finely chopped
- 3 clove Garlic finely chopped
- 2 tbsp Butter or
- 400 ml Milk or at room temprature
- 2 tbsp Flour or
- 1/4 cup Cheese grated or
- 250 gm Pasta penne
- 1 tsp Salt or as per taste
- 1/2 tsp Pepper black
- 1/2 tsp Italian Herbs mix
- 1/2 tsp Chilli Flakes optional
- 1/4 cup Cheese grated or replace with
Instructions
Preparation
- Finely chop the bell pepper and mince the garlic. Ensure your milk is at room temperature for a smoother sauce.
Cook the Pasta
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water before rinsing with cold water to stop the cooking process. Toss with a little olive oil to prevent sticking.
Make the Sauce
- Heat the olive oil and butter in a large skillet over medium heat. Add the minced garlic and saute for about 30 seconds until fragrant. Add the chopped bell pepper and saute for another 2 minutes.
Roux and White Sauce
- In the same skillet, whisk in the flour and cook for 1-2 minutes, stirring constantly, until the mixture is smooth and lightly browned (this is called a roux). Gradually whisk in the room-temperature milk, ensuring there are no lumps. Continue whisking until the sauce thickens and simmers slightly.
Season and Combine
- Stir in the Parmesan cheese, salt, pepper, Italian herbs, and red pepper flakes (if using). Bring to a simmer. Add the cooked pasta and reserved pasta water if needed to adjust the consistency. Stir until the pasta is well coated and heated through.
Serve
- Serve immediately and enjoy your delicious Creamy Tomato & Garlic Pasta!
Recipe Notes
Expert Tips for Perfect Pasta
- Room Temperature Milk: Using room-temperature milk prevents the sauce from curdling and ensures a smoother, creamier consistency.
- Don't Overcook the Vegetables: Sauté the vegetables just until tender-crisp to retain their vibrant color and flavor.
- Master the Roux: Cook the flour and butter mixture (roux) long enough to remove the raw flour taste. This is key to a smooth, flavorful sauce.
- Reserved Pasta Water: The starchy pasta water helps thicken the sauce and create a creamy, cohesive texture. Add a tablespoon at a time until desired consistency is reached.
