Ingredients
 

Pasta

Garlic & Chili

  • 12-15 clove Garlic remove the hard center from each clove for easier digestion
  • 1-2 Chili Peppers fresh; remove seeds for less heat, red

Sauce

  • 7 tbsp Olive Oil extra virgin olive oil recommended

Garnish

Pasta Water

  • 1 liter Water
  • 10 gm Salt for pasta water

Instructions
 

Prepare the Pasta

  • Bring 1 liter of water to a boil in a large pot. Add 10g of salt. Add the spaghetti and cook according to package directions, usually 10-12 minutes, until al dente. Reserve about 1/2 cup of pasta cooking water before draining.

Prepare the Garlic and Chili

  • While the pasta cooks, peel and mince the garlic cloves. Remove the hard center for easier digestion. Finely slice the red chili peppers; remove seeds for less heat.

Sauté the Aromatics

  • Heat the olive oil in a large skillet over low heat. Add the minced garlic and cook for 2 minutes, or until fragrant and lightly golden. Be careful not to burn the garlic.

Add Chili and Pasta Water

  • Add the sliced chili peppers to the skillet and cook for 3-4 minutes, until softened. Add a splash (about 2 tablespoons) of the reserved pasta water to create a light sauce.

Combine and Finish

  • Add the cooked spaghetti to the skillet with the garlic and chili. Toss to coat evenly in the oil. Add more pasta water if needed to create a light, emulsified sauce.

Serve

  • Garnish with freshly chopped parsley and grated Parmesan cheese. Serve immediately.
