Ingredients

- 3 tbsp Cooking Oil vegetable or ghee
- 1 tsp Cumin seeds
- 1/2 tsp Asafoetida hing
- 1/4 tsp Turmeric haldi, powder
- 1 tsp Chili Powder adjust to taste, red
- 2 tbsp Coriander dhania, powder
- 1.5 tsp Salt or to taste

- Coriander for garnish
Instructions
Prepare the Potatoes
- Wash and boil the potatoes until tender but not mushy. Cool, peel, and dice into even-sized pieces.
Sauté the Spices
- Heat the cooking oil in a pan over medium heat. Add cumin seeds and asafoetida; sauté until the cumin seeds turn light brown and fragrant.
Cook the Tomatoes
- Add the chopped tomatoes, salt, red chili powder, and coriander powder to the pan. Cook, stirring occasionally, until the tomatoes soften and release their juices, about 5-7 minutes. The oil should begin to separate from the mixture.
Combine and Simmer
- Add the diced potatoes to the tomato mixture. Stir well to combine. Add about 1/2 cup of water, reduce heat to low, cover, and simmer for 6-7 minutes, or until the potatoes are cooked through and the sauce has thickened slightly.
