Ingredients
Spice Paste
Spices and Aromatics

- 1 tsp Cumin Seeds jeera
- 1 tsp Coriander Powder dhania
- 1/2 tsp Chili Powder mirch (adjust to taste)
- 1/4 tsp Cinnamon Powder
- 1 tbsp Cashews or 1 tbsp cashew paste
Other Ingredients
- 1 tbsp Tomato Puree
- 1/4 cup Coconut Cream
- 2 tbsp Coconut Milk
- 2 tbsp Mustard Oil
- 1.5 tsp Salt or to taste
- 1 cup Water or as needed for desired consistency
Instructions
Prepare the Eggs and Potatoes
- Shallow fry the hard-boiled eggs and diced potatoes in mustard oil until lightly browned. Add turmeric powder and salt. Set aside.
Make the Spice Paste
- In a blender, combine ginger, green chilies, and a little water to form a smooth paste.
Sauté the Spices
- Heat the remaining mustard oil in the same pan. Add cumin seeds and let them splutter. Add the spice paste and sauté for a minute until fragrant.
Simmer the Curry
