Ingredients
For the Strawberry Compote:
- 1 cup Strawberries fresh, hulled and finely chopped
- 3/4 cup Sugar granulated
For the Ice Cream Base:
- 1 cup Milk chilled, whole milk
- 3/4 cup Heavy Cream chilled
- 1 tsp Vanilla Extract
- 1/2 tsp Salt
- 1/4 cup Coconut Oil for smoother texture, refined
- 1-2 drops Food Coloring for deeper color, optional, red
For the Churning Process:
- 2 tbsp Vodka helps prevent ice crystals
Instructions
Make the Strawberry Compote
- Combine chopped strawberries and 3/4 cup sugar in a saucepan over medium-high heat. Bring to a boil, stirring constantly. Reduce heat and simmer for 5 minutes.
- Remove from heat and let cool completely. Puree in a blender until smooth. Refrigerate until chilled.
Make the Ice Cream Base
- In a blender, combine chilled milk, heavy cream, cooled strawberry puree, coconut oil, vanilla extract, salt, and food coloring (if using).
- Blend until completely smooth and creamy.
First Freeze
- Pour the ice cream mixture into a shallow, freezer-safe container. Freeze for at least 3 hours, or until partially set.
Churn for Smoothness
- Remove the ice cream from the freezer and let it soften slightly at room temperature for about 10-15 minutes.
- Add vodka to the partially frozen ice cream and churn with an electric mixer until smooth and creamy, scraping down the sides as needed. This process breaks up ice crystals.
Final Freeze
- Return the ice cream to the freezer container and freeze for at least 4-6 hours, or until fully set.
Serve and Enjoy
- Serve your homemade strawberry ice cream immediately or store it in the freezer for up to 2 weeks.
