Ingredients
For the Cottage Cheese Ice Cream
- 500 gm Cottage Cheese paneer
- 500 ml Milk
- 2 tbsp Lime Juice freshly squeezed
- 100 ml Heavy Cream
- 1/2 can (400g) Fruit Cocktail drained
- Sugar to taste
For the Sweet Vermicelli
- 1/4 cup Vermicelli roasted
- 1 tbsp Clarified Butter
- 10 Cashews
- 7 Almonds
- 1/4 tsp Cardamom ground
- 1/4 tsp Salt
- 1/2 cup Water
Instructions
Make the Cottage Cheese Ice Cream
- In a saucepan, bring the milk to a rolling boil. This creates the ideal temperature for the lime juice to work its magic.
- Reduce the heat to low and stir in the lime juice. The milk will begin to curdle, separating the curds from the whey. This process creates the base for our cottage cheese.
- Line a colander with a muslin cloth or cheesecloth. Carefully pour the curdled milk into the lined colander to strain the whey. Gently gather the edges of the cloth and tie it securely. Hang the cloth for 30 minutes to allow the excess whey to drain, resulting in a firmer cottage cheese.
- Once the cottage cheese has cooled and drained, transfer it to a blender. Add the heavy cream, drained fruit cocktail, and sugar to taste. Start with a small amount of sugar and adjust according to your preference and the sweetness of the fruit cocktail.
- Blend until the mixture is completely smooth and creamy. This step ensures a luxurious texture for the ice cream.
- Pour the mixture into a freezer-safe container, cover tightly, and freeze for 4-5 hours, or until firm. This allows the ice cream to set completely.
Prepare the Sweet Vermicelli
- In a pan over medium heat, melt the ghee. Add the roasted vermicelli, cashews, and almonds. Roast, stirring frequently, until the nuts are fragrant and lightly golden. This enhances their flavor and adds a satisfying crunch.
- Pour in the water and bring to a simmer. Cook until the vermicelli is tender and the water has been absorbed. Be careful not to overcook, as the vermicelli should retain a slight bite.
- Stir in the sugar to taste and salt. Remember that the ice cream already contains sugar, so adjust accordingly.
- Add the ground cardamom and remove from heat. The cardamom provides a warm, aromatic touch.
- To serve, place the warm sweet vermicelli on a plate. Top with a generous scoop of the mixed fruit cottage cheese ice cream. Garnish with extra chopped mixed fruits for added visual appeal and flavor. Serve immediately and enjoy!
Recipe Notes
Good To Know
- For extra crunch and visual appeal, lightly toast the vermicelli in a dry pan until golden before assembling the dessert. This prevents sogginess and adds a nutty aroma.
- To enhance the tangy notes, try folding in a spoonful of finely chopped candied ginger or a swirl of passion fruit pulp into the cottage cheese ice cream before freezing.
- If making ahead, assemble individual servings in small jars or glasses and freeze. Let them sit at room temperature for 10 minutes before serving to achieve the ideal creamy consistency.
- For a vegan version, substitute cottage cheese and cream with blended silken tofu or coconut cream, and use plant-based milk; add a touch more lime juice to balance the flavors.
Expert Tips
- Balance the sweetness and tanginess: Adjust the amount of lime juice and sweetener to your liking. Taste the cottage cheese mixture before freezing and adjust accordingly.
- Get creative with toppings: Beyond vermicelli, consider toppings like toasted coconut flakes, chopped nuts, fresh berries, or a drizzle of honey.
- Ensure a smooth ice cream: For a smoother ice cream texture, blend the cottage cheese mixture thoroughly until it's completely smooth and creamy before freezing.
Storage Instructions
- Store leftover dessert in airtight containers in the freezer for up to 2 weeks.
