Instructions

Prepare the Tomato-Onion Puree

  • Boil 2 cups of water in a saucepan. Add the chopped onion and tomatoes. Simmer for 15 minutes, or until the vegetables are softened.
  • Once cooled, blend the mixture into a smooth puree using a blender or food processor.

Fry the Paneer

  • Cut the paneer into bite-sized cubes. Heat 1 tablespoon of oil in a large pan or kadhai over medium heat. Fry the paneer cubes until lightly golden brown. Set aside.

Make the Curry

  • Heat the remaining 1 tablespoon of oil in the same pan. Add the mustard seeds and cumin seeds. Once they splutter, add the ginger-garlic paste and sauté for 1 minute until fragrant.
  • Add the green peas and sauté for 3 minutes.
  • Stir in the tomato-onion puree, turmeric powder, and red chili powder. Mix well.
  • Add the garam masala and salt. Mix well and cook for 10 minutes on medium heat, stirring occasionally. Add a little water if needed to adjust the consistency.

Combine and Serve

  • Gently stir in the fried paneer cubes. Simmer for another 5 minutes to allow the flavors to meld. Do not overcook the paneer.
  • Serve hot with roti, naan, or steamed rice.

Recipe Notes

Expert Tips for the Perfect Paneer Matar Sabzi

  • For extra flavor, lightly roast the cumin and coriander seeds before grinding them into a powder and adding to the curry.
  • If using frozen peas, add them towards the end of the cooking time to prevent them from becoming mushy.
  • Adjust the amount of red chili powder to control the spice level to your preference. Start with less and add more if needed.
  • To enhance the creaminess, stir in a dollop of cream or yogurt at the end.
