Ingredients
For the Curd Rice
- 1 cup Yogurt diluted with a little water if thick, fresh
- 1 Chili Pepper finely chopped, green
- 1 sprig Coriander (cilantro), fresh
- 1/8 cup Carrot finely chopped, optional
For the Tempering
- 2 tsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Gram (split black gram), black
- 1/2 tsp Ginger grated or finely chopped
- 2 Chili Pepper broken into pieces, dried, red
- 8 Curry Leaves
- 1/4 tsp Asafoetida hing
Instructions
- Wash the rice thoroughly under cold water until the water runs clear. This removes excess starch and helps achieve fluffy rice.
- Combine the rinsed rice, water, and salt in a pot. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked through and tender, about 15-20 minutes.
- Once the rice is cooked, gently fluff it with a fork and let it cool completely. Cooling the rice prevents the yogurt from curdling and ensures a smooth texture.
- In a large bowl, combine the cooled rice and yogurt. If the yogurt is very thick, dilute it with a little water before adding it to the rice. Mix well.
- Add the chopped green chili, coriander leaves, and optional chopped carrots to the rice mixture. Mix gently to combine.
- Heat the oil in a small tempering pan over medium heat. Add the mustard seeds and let them splutter. This releases their aroma and adds a nutty flavor.
- Once the mustard seeds splutter, add the urad dal, grated ginger, dried red chilies, and curry leaves. Sauté for a few seconds until fragrant, being careful not to burn the spices.
- Immediately pour the tempering over the curd rice. The hot oil infuses the rice with the flavors of the spices.
