  • 1 Avocados ripe
  • 1 cup Carrot washed and grated
  • 1/2 Cucumber english cucumber preferred for less seeds

Dairy & Seasoning

  • 2 tbsp Yogurt greek yogurt recommended for creaminess
  • 1 tsp Salt
  • 1/2 tsp Pepper freshly ground preferred, black
  • 1 tbsp Lemon Juice optional, for extra brightness

Instructions
 

Preparation

  • Cut the avocado in half lengthwise.
  • Remove the pit.
  • Scoop out the avocado flesh with a spoon.
  • Grate the carrot.
  • Wash and chop the cucumber into small, bite-sized pieces.

Mixing all the ingredients

  • In a medium bowl, mash the avocado with a fork until mostly smooth but still slightly chunky.
  • Add the yogurt, grated carrot, and chopped cucumber.
  • Stir in the salt and pepper.
  • Add lemon juice (optional) and mix well.
  • Mix gently for about 2 minutes, being careful not to overmix.
