Ingredients
Lobster Preparation
- 4 Lobster Tails 1.5 - 2 lbs total
- 6 cups Water for poaching lobster
- 1 tsp Sea Salt for poaching water
Aromatics & Vegetables
Spices & Seasonings
- 1/2 tsp Salt
- 1/4 tsp Pepper black, freshly crushed
- 1/2 tsp Cayenne Pepper or to taste
Liquids & Cream
- 2 tbsp Tomato Paste
- 3 tbsp All-Purpose Flour
- 1 1/4 cups Wine dry, white
- 4 cups Seafood Stock preferably lobster stock
- 1 cup Heavy Cream
Instructions
Prepare the Lobster
- Poach the lobster tails in salted boiling water for 5-6 minutes, until bright red. Remove, cool, and reserve the meat. Roast the shells at 350°F (180°C) for 8-10 minutes. Add the roasted shells to the poaching liquid, simmer for 15 minutes to extract flavor, and strain.
Sauté Aromatics
- In a large pot, melt butter with olive oil over medium heat. Add onion, carrots, and celery; sauté until softened. Stir in thyme, tarragon, and garlic; cook until fragrant.
Build the Bisque
- Season with salt, pepper, and cayenne. Add tomato paste and flour, cooking for 2 minutes. Deglaze the pot with white wine, reducing by half. Stir in the strained lobster stock and simmer for 30 minutes, until slightly thickened.
Blend and Finish
- Remove from heat and carefully transfer the mixture to a blender. Blend until completely smooth. Strain through a fine-mesh sieve back into the pot. Stir in heavy cream, season to taste, and adjust consistency as needed. Add chopped lobster meat just before serving.
