Ingredients
Shortcrust Pastry
- 1 cup All-Purpose Flour
- 100 gm Butter cold, cubed, unsalted
- 1/2 tsp Salt
- 2-3 tbsp Water for kneading
Tart Filling
- 1/2 cup Mozzarella Cheese grated
- 1/3 cup Heavy Cream
- 8 large Cherry Tomatoes halved or quartered
- 2 clove Garlic minced
- 1/4 cup Basil Leaves fresh, roughly chopped
- 1/2 tsp Chili Flakes or to taste, red
- 1/2 tsp Oregano dried
- 1/4 tsp Pepper black, freshly ground
- 1 tsp Salt or to taste
- 1 tsp Olive Oil for greasing the pan
Saffron Cream Sauce
- 1/4 cup Heavy Cream fresh
- 1 tbsp Butter unsalted
- 1/4 cup Milk whole milk preferred
- 1/2 tsp Saffron Threads
- 1/4 tsp Sugar granulated
- 1/8 tsp Pepper black, freshly ground
Instructions
Make the Shortcrust Pastry
- In a mixing bowl, whisk together the all-purpose flour and salt.
- Cut in the cold, cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until the dough just comes together. Do not overmix.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
Prepare the Tart Shells
- Preheat oven to 350°F (175°C). Lightly grease mini tart pans with olive oil.
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness.
- Use a cookie cutter or knife to cut out circles slightly larger than your tart pans.
- Press the dough into the tart pans, ensuring it reaches the edges. Trim any excess dough.
- Bake the tart shells for 15-20 minutes, or until lightly golden.
- Let the shells cool completely on a wire rack.
Make the Filling
- In a small bowl, combine the heavy cream, minced garlic, red chili flakes, oregano, black pepper, and salt. Mix well.
Make the Saffron Cream Sauce
- In a small saucepan, heat the milk over medium heat. Add the saffron threads and let steep for 5 minutes.
- Stir in the heavy cream and butter. Cook, stirring occasionally, until the sauce thickens slightly (about 5 minutes). Remove from heat and stir in the sugar and pepper.
- Let the sauce cool completely and chill in the refrigerator.
Assemble and Bake the Tarts
- Spread a thin layer of grated mozzarella cheese in each cooled tart shell.
- Spoon 1-2 tablespoons of the cream cheese filling over the mozzarella.
- Top with halved cherry tomatoes and chopped basil.
- Bake for 5-7 minutes, or until the filling is heated through and the tomatoes are slightly softened.
Serve
- Serve the tarts warm or at room temperature with a dollop of chilled saffron cream sauce.
