Ingredients
 

For the Lobster Ravioli

  • 36 pieces Lobster Ravioli frozen; you can also use fresh ravioli if desired

For the Vodka Sauce

  • 60 ml Olive Oil extra virgin
  • 10 cloves Garlic crushed and peeled
  • 2 cans (28 oz each) Plum Tomatoes finely chopped; italian plum tomatoes are preferred for their flavor
  • 1-2 tsp Pepper Flakes or to taste, red
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Pepper black, freshly ground, or to taste
  • 80 ml Vodka
  • 120 ml Heavy Cream
  • 2 tbsp Basil chopped, fresh

Make the Vodka Sauce

  • In a large skillet, sauté olive oil over medium heat. Add crushed garlic and cook for about 3 minutes, or until lightly browned. Add the chopped plum tomatoes, salt, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 2 minutes. Pour in the vodka and simmer for another 6 minutes. Stir in the heavy cream and fresh basil.

Cook the Ravioli

  • Cook the lobster ravioli according to package directions in lightly simmering salted water until al dente. Drain the ravioli well.

Combine and Serve

  • Add the drained ravioli to the skillet with the vodka sauce. Toss gently to coat. Portion the lobster ravioli onto warm serving plates. Garnish with grated Parmigiano-Reggiano cheese and chopped parsley. Serve immediately and enjoy!
