Ingredients
Dry Ingredients
- 3 cup Rolled Oats
- 1/4 cup Almonds sliced
- 1/4 cup Cashews sliced
- 3 tsp Cocoa Powder unsweetened
- 1/4 tsp Cinnamon ground
Other Ingredients
- 1/2 cup Cane Sugar
- 1/4 cup Apricots diced, dried
- 2 Tbsp Chocolate chopped, dark
Instructions
- Preheat oven to 200°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, sliced almonds, and sliced cashews. Spread them evenly on the prepared baking sheet.
- Roast the oat mixture for 10 minutes. This helps to enhance their nutty flavor and create a crispier granola.
- In a saucepan over medium heat, combine the olive oil, honey, and cane sugar. Heat, stirring constantly, until the sugar dissolves and the mixture is smooth.
- Remove the saucepan from the heat and stir in the unsweetened cocoa powder and ground cinnamon.
- Pour the wet ingredients over the roasted oat mixture. Stir well to ensure all the oats and nuts are evenly coated.
- Spread the granola mixture back onto the lined baking sheet in an even layer.
- Bake for 15 minutes, or until the granola is golden brown and fragrant. Stirring halfway through helps ensure even baking.
- Remove the baking sheet from the oven and let the granola cool completely on the pan. This allows it to crisp up further.
- Once cooled, break the granola into clusters. Stir in the chopped dark chocolate and diced dried apricots.
- Store the granola in an airtight container at room temperature for up to 2 weeks.
Recipe Notes
Good To Know
- Granola recipes are generally very forgiving. You can omit any nuts or add others based on your preference.
- Adjust the sugar to your liking.
- Use any liquid sweetener.
- Add any dried fruits such as apricots, cranberries, dates, etc.
- Chocolate chips can also be added.
- For extra clusters, firmly press the oat and nut mixture onto the baking sheet before baking. Let it cool completely before breaking into chunks.
- For softer dried fruit, stir it into the granola immediately after baking while it's still warm.
- Experiment with flavor by adding orange zest or a pinch of sea salt to the chocolate mixture before baking.
Expert Tips
- Toasting the nuts separately before combining them with the other ingredients enhances their flavor and adds extra crunch.
- For a chewier granola, use less oil and a higher proportion of oats to nuts.
- If your granola seems too dry after baking, drizzle it with a little more liquid sweetener and bake for a few more minutes.
Storage Instructions
- Store the cooled granola in an airtight jar. Add a few grains of uncooked rice wrapped in cheesecloth to absorb excess moisture and maintain crispness.
