Preparation

  • Preheat your oven to 180°C (350°F). Grease and flour a baking pan with high sides (a Swiss roll pan works well) to prevent sticking and to accommodate any potential liquid during baking.

Making the Base

  • Melt the butter in a saucepan over low heat. Add the powdered sugar and honey, stirring constantly until the mixture comes to a gentle boil. Remove from heat and let it cool for about 5 minutes. Stir in the vanilla extract.

Combining Ingredients

  • In a large bowl, combine the rolled oats, mixed nuts, sunflower seeds, melon seeds, raisins, cranberries (if using), and chopped dried apricots. Pour the cooled butter-sugar-honey mixture over the dry ingredients and mix thoroughly until everything is evenly coated.

Baking the Bars

  • Transfer the mixture to the prepared baking pan and press it down firmly to create an even layer. Bake for 30 minutes, or until the top is golden brown and the bars are firm to the touch.

Cooling and Cutting

  • Remove the pan from the oven and let the bars cool completely in the pan before cutting them into finger-sized pieces. Once cool, use a sharp knife to cut the bars into desired shapes and sizes. Store in an airtight container at room temperature.
