- 1/4 cup Desiccated Coconut

- 1/4 cup Coconut Oil
- 1/4 cup Honey
Instructions
- Lightly pulse the walnuts and almonds in a food processor. This creates a coarse chop while maintaining some texture.
- Add the pumpkin, melon, sunflower, and flax seeds to the food processor. Pulse briefly to combine with the nuts.
- Transfer the nut and seed mixture to a large mixing bowl. Add the oats, desiccated coconut, coconut sugar, and cocoa powder. Stir well to combine all the dry ingredients.
- In a small saucepan, gently melt the coconut oil over low heat. Once melted, remove from heat and stir in the honey until well combined.
- Pour the coconut oil and honey mixture over the dry ingredients. Use your hands to thoroughly mix and ensure all the oats and nuts are evenly coated. This helps the granola cluster together during baking.
- Preheat oven to 285°F (140°C). Spread the granola mixture in a thin, even layer on a baking sheet lined with parchment paper.
- Bake for 20 minutes, then remove from the oven and stir gently. This ensures even browning and crispness. Return to the oven and bake for another 20 minutes.
- Stir the granola once more and bake for a final 10 minutes. Turn off the oven and leave the granola inside to cool completely. This helps it crisp up further.
