  • Soak the dates and raisins in warm water for about 15 minutes to soften them. This will make them easier to blend.
  • Drain the dates and raisins and transfer them to a food processor or blender. Blend until a smooth paste forms.
  • In a large skillet over medium heat, combine the peanuts, sesame seeds, almonds, cashews, melon seeds, and sunflower seeds. Toast the nuts and seeds, stirring frequently, until fragrant and lightly golden. This enhances their flavor and adds a satisfying crunch.
  • Let the toasted nuts and seeds cool slightly, then roughly chop them or pulse them in a food processor for a finer texture. You can leave some larger pieces for added texture.
  • In a large mixing bowl, combine the date and raisin paste, cocoa powder, and vanilla extract. Mix well until everything is evenly incorporated.
  • Add the chopped nuts and seeds and chocolate chips to the bowl. Mix thoroughly until the dry ingredients are evenly distributed throughout the date mixture.
  • Line a baking sheet with parchment paper, leaving some overhang on the sides for easy removal. Transfer the mixture to the prepared baking sheet.
  • Using a spatula or your hands, press the mixture firmly and evenly into a rectangular shape about 1/2-inch thick. Pressing firmly ensures the energy bites will hold their shape.
  • Refrigerate the mixture for at least 1 hour, or until firm. This will make it easier to cut.
  • Once firm, remove the mixture from the refrigerator and cut it into small squares or bite-sized pieces.
