- In a mixing bowl, cream together the softened butter, honey, granulated sugar, and vanilla extract until light and fluffy. This creates air pockets for a tender cookie.
- In a separate bowl, whisk together the all-purpose flour, desiccated coconut, baking powder, and baking soda. This ensures the leavening agents are evenly distributed for a consistent rise.
