- 2 tbsp Sugar icing sugar, for dusting
- Optional Fruit Jam Or Berries for serving, fresh
- 1/4 cup Milk to adjust consistency if needed
Instructions
Prepare the Dry Ingredients
- Sift together the self-raising flour and baking powder. Set aside.
Cream Butter and Sugar
- In a mixing bowl, cream together the softened butter and castor sugar until light and fluffy. Beat in the egg until well combined.
Melt the Chocolate
- Melt the chopped dark chocolate using a double boiler or microwave in short bursts, stirring until smooth. Let it cool slightly.
Combine Wet and Dry Ingredients
- Gently fold the melted chocolate into the butter-sugar-egg mixture. Gradually add the sifted dry ingredients, mixing until just combined. Add milk if the batter is too thick.
Prepare the Muffin Tins
- Preheat your oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners.
Fill and Bake
- Fill each muffin liner about ¾ full with batter. Sprinkle chocolate chips on top. Fill the remaining batter to the top of the liners.
- Bake for 14-15 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
Cool and Serve
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Dust with icing sugar and serve warm with fruit jam or fresh berries, if desired.
Recipe Notes
Expert Tips for Molten Chocolate Lava Muffins
- For extra-intense chocolate flavor, use high-quality dark chocolate with a high cocoa percentage (70% or higher).
- Don't overmix the batter! Overmixing will develop the gluten in the flour, resulting in tough muffins. Mix only until just combined.
- For perfectly gooey centers, ensure the muffins are not overbaked. Start checking for doneness around 12 minutes.
- If you prefer a less intense chocolate flavor, you can substitute some of the dark chocolate with semi-sweet chocolate chips.
