  • 50 gm Butter softened, unsalted
  • 1 Egg large
  • 2 tbsp Sugar caster sugar
  • 100 gm Chocolate dark, finely chopped

Prepare the Dry Ingredients

  • Sift together the self-raising flour and baking powder. Set aside.

Cream Butter and Sugar

  • In a mixing bowl, cream together the softened butter and castor sugar until light and fluffy. Beat in the egg until well combined.

Melt the Chocolate

  • Melt the chopped dark chocolate using a double boiler or microwave in short bursts, stirring until smooth. Let it cool slightly.

Combine Wet and Dry Ingredients

  • Gently fold the melted chocolate into the butter-sugar-egg mixture. Gradually add the sifted dry ingredients, mixing until just combined. Add milk if the batter is too thick.

Prepare the Muffin Tins

  • Preheat your oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners.

Fill and Bake

  • Fill each muffin liner about ¾ full with batter. Sprinkle chocolate chips on top. Fill the remaining batter to the top of the liners.
  • Bake for 14-15 minutes, or until a toothpick inserted into the center comes out with moist crumbs.

Cool and Serve

  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Dust with icing sugar and serve warm with fruit jam or fresh berries, if desired.
