Ingredients
 

Vegetables & Legumes

  • 2 cup Amaranth Leaves also known as chauli
  • 1/2 cup Split Chickpea split chickpeas, soaked in water for at least 30 minutes
  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 1-2 Chili adjust to taste, finely chopped, green

Prepare the Vegetables and Dal

  • Wash and chop all the vegetables. Soak the chana dal in water for at least 30 minutes.

Sauté the Aromatics

  • Heat oil in a pan or pot. Add onions and sauté until softened. Add ginger, garlic, green chilies, and tomatoes. Cook until tomatoes are soft and slightly mushy.

Add Amaranth and Spices

  • Add the chopped amaranth leaves and soaked chana dal to the pan. Stir well to combine. Add turmeric powder, red chili powder (if using), coriander powder, and salt. Add about 1 cup of water.

Simmer and Cook

  • Bring the mixture to a simmer, cover, and cook until the chana dal is tender but still holds its shape (about 10-15 minutes). Add more water if needed to prevent sticking or burning. Taste and adjust salt as required.

Prepare the Tempering

  • In a small pan, heat the oil for tempering. Add mustard seeds, cumin seeds, and dry red chilies. Once the seeds splutter, add curry leaves and asafoetida. Stir for a few seconds.

Combine and Serve

  • Pour the tempering over the cooked amaranth and chana dal sabzi. Mix well. Garnish and serve hot with roti, rice, or naan.
