- 1 tsp Coriander dhania, powder
- 1/4 tsp Turmeric haldi, powder
- 1 tsp Chili Powder adjust to your spice preference, mirch, red
- 1.5 tsp Salt or to taste

- Heat oil in a non-stick pan or kadai over medium heat. Add the finely chopped tomato and sauté until softened, about 3-5 minutes.
Adding Spices
- Add cumin seeds and saute for 30 seconds until fragrant. Stir in turmeric powder, red chili powder, coriander powder, and salt. Cook for another minute, stirring constantly, until fragrant.
Incorporating Amaranth
- Add the washed and cleaned amaranth leaves to the pan. Stir well to combine with the spice mixture. Add 1/2 cup of water, cover the pan, and let it simmer for 6-7 minutes, or until the amaranth is tender but still slightly vibrant green. Stir occasionally to prevent sticking.
